Observation (CORRECTED DURING INSPECTION): Bean sprouts stored at room temperature with no ice.
Corrective Action(s): Discussed using ice water bath to store bean sprouts during rush hour and store the remaining bulk bean sprouts in the walk-in cooler. Please obtain proper ice cube trays to make ice or purchase bags of ice for this.

Observation (CORRECTED DURING INSPECTION): Observed a tray of utensils stored in a metal tray and staff informed the items were clean. A piece of onion/noodle was still inside the metal tray. Some yellowing debris underneath the rack for BBQ pork oven.
Corrective Action(s): Please thoroughly clean and sanitize all utensils and dishware. Inspect to verify that the surface has been cleaned and air dried properly before reuse.

Observation (CORRECTED DURING INSPECTION): Several wet wiping towels were stored on the counter.
Corrective Action(s): Directed operator to add a sanitizer bucket to store wet wiping clothes for staffs using the cooking line. Wet wiping clothes should be stored in sanitizer between uses.

Observation: Grease build up on the wall under cooking station; food debris collected under deep fryer, some garbage behind chest freezer and preserved black beans spilled in the dry storage room.
