302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Noted several cloths on food contact surfaces throughout premises. Sanitizer in back food preparation area was too strong (bleaching out test strip) and cloths stored in sanitizer solution in the front service area were not fully submerged in sanitizer.
Corrective Action(s): Ensure sanitizer solution is maintained at 100ppm. Keep all cloths stored in sanitizer solution to prevent microbial growth. Ensure cloths stored in sanitizer solution are fully submerged.

Observation (CORRECTED DURING INSPECTION): Container of tofu was noted in the hand sink. This issue has been noted in previous inspection reports.
Corrective Action(s): Do not block/obstruct hand wash station at any time.

Observation: Back door to premises was open at time of inspection.
Corrective Action(s): Keep back door closed or install a screen in order to prevent pest entry.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Noted heavy build up of grease on hood ventilation system. Hood ventilation system was due for cleaning in March 2016.
Corrective Action(s): Have hood ventilation system cleaned.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: A) Noted cloths used to line floor in front of dish washer and cookline.
B) Also noted 'home depot' containers used to store broths. Home Depot is not a food supply store.
C) Hand sink in front service area splashes water on counters when turned on.
Corrective Action(s): A) Obtain proper non slip mats intended for commercial food facilities to prevent slipping. Do not use absorbent towels to line floors or other surfaces.
B) Ensure only reusable food grade containers are used to store foods. Obtain proper food containers.
C) Install aerator on faucet to prevent splashing of water on to counters.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Chlorine sanitizer in back food preparation area was in a cooking pot. Operator said that the staff know this is sanitizer as one of the handles on the pot is broken. No label indicating what solution was.
Corrective Action(s): In order to avoid any potential confusion do not store chemicals in food containers and ensure all chemicals are labelled accordingly.

Comments

All coolers 4C or less.
Freezers - 16C to -23C (Ensure all frozen potentially hazardous foods are stored at -18C or less.)
No hot holding available at time of inspection. Rice was being cooked in rice cooker.
Overall general sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Meat slicer in use at time of inspection. Operator said meat slicer is used approx once every two days and is taken apart and clean/sanitized after each use.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered, lights in food preparation areas have covers..etc)
