402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)] Observation (CORRECTED DURING INSPECTION): Observed same staff wearing gloves to dip hands into sanitizer and then handled buns to place on patty. Repeat. Corrective Action(s): Do not dip hands in sanitizer as this practice does not replace handwashing or is acceptable. Refer to your food safety plans. Violation Score: 5

Comments

Droppings removed, cleaning completed under two compartment sinks and ice machine. Tongs in boiling water over grill to place raw patties on to grill. Timer ordered for both cheese and patties but not in use yet. Commence immediately. Dishwasher still reading 69.9C at plate. Thermometer obtained to test dishwasher but operator may need to look into getting thermo-labels. Operator adjusted temperature again onsite but temperature reading 68.9C. --> Have this repaired by Monday! Manual warewashing sign provided as well, adhere immediately. Pest control report received - confirm how frequent pest control visits. *Grease bin overflowing in the back - manager contacted company immediately for service. Increase service to reduce these incidences. *Please send me updated food safety plans.
