304 - Premises not free of pests [s. 26(a)]
Observation: Observed moderate number of fruit flies concentrating in and around the beverage syrup station in back of premises, extending to mop area and dish sink area. Operator aware and trap boxes supplied by pest control company? No obvious syrup spills or pooling stagnant water in the area. Open bucket observed behind baking oven with small volume of water around the floor under dish sinks. Drains in sinks and floor may also be contributing.
Corrective Action(s): Expose area under mop sink and clean up as necessary. Leave exposed for follow up inspection.
Obtain more fly traps and place in strategic areas. Replace on frequent basis on advice by Pest Control technician.
Confirm Pest Control Contract.
Establish a control program that targets ALL drains on daily basis as part of sanitation plan. Hot water/chemicals/physical cleaning of all drains to reduce attraction and breeding.
Target all drain connections and couplings for biomat accumulation and clean daily.

Observation: Some areas of premises, espcecially where flies are accumulating are not adequately cleaned.
Corrective Action(s): Make sure all hard to reach areas, including under shelving or under counters or under equipment are asessed and cleaned.
Make sure to clean all sinks daily and are used only as they are intended.
Mop heads, scrub brushes, containers, trolleys all need to be better cleaned at the end of the day.
THis will be reviewed at follow up inspection date.

Cooling units at or less than 4 C
Freezer below -18 C - Noted lots of frozen water on floor. Make sure drip line is not plugged so water can escape from compressor unit during defrost cycle.
Handwash stations - make sure they are ALL properly stocked with soap and paper towels AND are used AND remain free/clean for handwashing.
Sanitizer at sinks ok. ECOLAB sink and surface.
Chemicals for floors and greases empty at auto dispenser. Make sure they are all properly stocked for reinspection.
