Observation (CORRECTED DURING INSPECTION): Employee observed drying hands by wiping them on soiled apron.
Corrective Action(s): Employee rewashed hands (using liquid soap) and then dried them using a single use paper towel.
Ensure all employees are properly washing their hands, and are washing their hands as often as necessary to prevent potential contamination of food and food contact surfaces/equipment. Hands are to be dried with a single use paper towel only; drying hands with aprons or cloth towels (for example) may reintroduce contamination onto hands.

Bags of flour and onions stored directly on the ground.
Corrective Action(s): Ensure all food is protected from potential contamination at all times. Store food off the ground and ensure it is covered to protect from contamination. Date to be corrected by: Immediately.

Observation: Accumulation of debris observed in the following areas:
- Back hall (floor under racks)
- Cook line floor, walls, equipment
- Floors, walls, and equipment in three compartment sink area
- Storage rack and storage containers near cook line
- Kitchen preparation cooler interior
- Storage racks in food preparation area
Corrective Action(s): Ensure the above-noted areas are thoroughly cleaned. Food debris may potentially attract pest activity and may potentially lead to contamination of surfaces and equipment. Date to be corrected by: November 17, 2023.

Three compartment sink is available for manual ware washing. 100 ppm chlorine bleach water sanitizer was prepared in sanitizing compartment at time of inspection.
Sanitizer available in buckets at 100 to 200 ppm chlorine bleach.
No signs of pest activity observed at the time of inspection.
FOODSAFE requirements met at the time of inspection. FOODSAFE Level 1 certificate for operator (on site) valid to December 9, 2023.
