200ppm quats dispensed from 3 compartment sink chemical dispensing station.
200ppm quats available for use throughout the premise. Wiping cloths stored in solution when not in use.
Dishwasher registers 73 degrees C at the plate surface during the final rinse cycle.
General sanitation is good.
Walk in cooler at 3 degrees C.
Dough cooler at 4-5 degrees C.
Pizza preparation cooler inserts and lower section at or below 4 degrees C.
Under the counter freezer at -17 degrees C.
Upright freezer at -15 degrees C. Monitor and ensure -18 degrees C for freezers.
Beverage cooler in kitchen at 4-5 degrees C.
