Observation: Spill observed behind Combi oven from today. Cleaning of this area is required.
Corrective Action(s): Ensure spill is cleaned up to prevent slipping accidents or build up of grease and food debris. Enlist a technician to repair drain if needed. Correction required in 3 days.

Observation (CORRECTED DURING INSPECTION): Worn black peeling knife where paint was starting to come off the blade. The flaking paint may contaminate food.
Corrective Action(s): Ensure all utensils are equipment are in good working order and free of contamination. Operator removed old knife from premise at the time of inspection.

Pest control service and monitoring in place by Orkin.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Food protected from contamination. Food is from an approved source.
Equipment in good working order.
Ice machine is sanitary with dedicated hand scoop.
Temperature holding is adequate and in use with accurate thermometers and logs.
Quat sanitizer in use at 200 ppm in sani buckets.
Dishwasher final rinse at 77.6C at the plate.
Chemical test strips and logs available.
Valid Permit posted in conspicuous location.

Holding units:
Coolers at walkin cooler at 4C, dairy cooler at 4C, juice cooler at 4C and below.
Stove counter cooler at 3C (empty). Walk in freezer at -16C to -21C.
No hot holding at the time of inspection.

Recommendation: Dry storage room light cover replacement is needed. Currently the facility is going through cleaning and HVAC maintenance.
