1 compartment of the 3 comp sink filled with sanitizer solution (100 ppm chlorine) - good BOH has sanitizer in 100 ppm chlorine solution (bucket with wiping cloths) - good Stove top has been cleaned however, the debris tray is too heavily soiled to open and clean. Operator has ordered a new like-for-like stove top and oven (expected arrival time 3-4 weeks). Ensure that the equipment replacement is like for like. If different from the original equipment gain approval from district inspector.
