302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizing pail available at time of follow-up inspection. Staff scrambled to make one when the Environmental Health Officer entered the building.
Corrective Action(s): Ensure that you ALWAYS have a sanitizing pail on-site at 200 ppm chlorine residual.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Potatoes cooling on a tray were stored directly on the floor, underneath the prep tables.
2. Styrofoam bowl observed inside a dry storage container.
3. Numerous items inside the prep cooler and the stainless steel stand-up cooler were left uncovered.
Corrective Action(s): 1. Potatoes discarded at time of inspection. At no time is food to be cooled underneath your tables directly on the floor. Food MUST be stored 6" off the floor or above to protect food from contamination.
2. Styrofoam bowl removed. Do not use styrofoam bowls as "scoops" - they cannot be cleaned/sanitized and forces food handlers to reach directly into the food.
3. Cover ALL food products when not in use. Raw food items must always be located underneath cooked and ready-to-eat products.

Observation: Rodent present inside a Ketch-all (TM) trap (nearby entrance to the kitchen).
Corrective Action(s): Pest control company has been contacted to remove the mice by end of day. Ensure that you keep the door closed at all times when not in use. Continue to monitor for any developing holes in any pipes underneath plumbing fixtures. Your premise will be re-inspected in the future for any rodent activity.

Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION. Door was wide open at time of inspection.
Corrective Action(s): Door was closed at time of inspection. Ensure that the door remains closed at all times unless during deliveries, or when you have a screen door available. You already have rodents in your facility, therefore it is imperative that you take all necessary measures to ensure that pests do not enter.

Follow-up inspection conducted. The following was noted:
Paper towel dispenser has been repaired at the hand wash station
Prep cooler measures at 3C (top & bottom)
Professional pest company continues to come on a regular bases to reset traps; however, additional effort is still needed to assess, and seal, any holes that may be developing
