Sanitizer (quats) measured 200 ppm (in buckets and spray bottles).
Wiping cloths stored in sanitizing solution.
Walk-in freezer was at -23 deg C.
Walk-in coolers was at 1-3 deg C.
Back area hot holding - chicken strips were at 70 deg C.
High temp dishwasher reached 73.4 deg C at plate surface.
Front service area line coolers and sandwich cooler were at or below 4 deg C.
Hot holding for soups/chilli was at 68 deg C; for meat/chicken was at 64-66 deg C.
Temperature log was maintained digitally (up to date).
Pest control monitoring in place. Control measures in place for flies.
Manager and supervisors have valid Food Safe 1 equivalency.
General sanitation was satisfactory at time of inspection.
