Observation (CORRECTED DURING INSPECTION): Toppings stored in inserts of pizza prep cooler were at 8-9C
Corrective Action(s): Do not fill inserts all the way to the top. Keep inserts only 1/2 full to promote better air circulation, and keep lid to pizza prep cooler closed in between uses. Staff moved inserts to undercounter portion of prep cooler at time of inspection.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in three compartment sink had only 50 ppm chlorine detected.
Corrective Action(s): Staff prepared fresh solution at time of inspection; 200 ppm chlorine detected. Ensure to change sanitizer solution every 4 hours at a minimum or sooner if solution becomes visibly dirty.

Observation: Scoops stored directly in ingrdients (ex. dry ingredient bins and bins in walk-in cooler)
Corrective Action(s): Discontinue this practice. Remove all scoops from bins and wash, sanitize, air dry, and store in a clean place until needed. Use scoops only as needed, ensuring to wash and sanitize after each use.

Observation: 1) Floors of entire kitchen have build-up of grease and food debris.
2) Food storage bins and lids have accumulation of food debris.
Corrective Action(s): 1) Clean and sanitize fllors in all areas, especially underneath equipment in hard to reach areas, and in walk-in cooler.
2) Clean and sanitize all dry ingredient bins and other food storage bins in walk-in cooler
