Observation (CORRECTED DURING INSPECTION): Food debris (vegetable) still noted stuck on the sides of a cleaned vegetable slicer hung above th 2-compartment sink.
Corrective Action(s): **Issue corrected at the time of inspection** Operator took down the vegetale slicer to rewash. Please check the cleanliness of all utensils and equipment after washing to ensure that they are completely cleaned and sanitized prior to storing away.

Observation (CORRECTED DURING INSPECTION): 1. Over 200 PPM chlorine residual detected in all 3 sanitizer spray bottles noted throughout the prep and cooking areas.
2. Ice scoop was stored buried within the ice in the ice machine during the inspection.
Corrective Action(s): **Issues corrected at the time of inspection**
1. Operator diluted the sanitizer spray bottles during the inspection. After the dilution, 200 PPM chlorine residual was detected in all 3 bottles. Use your chlorine test strips to verify the concentration prior to using.
2. Operator took out the ice scoop and stored it properly, with the handle extending away from the ice - always store with handle away from food/ ice to prevent potential contamination of the ice.

Observation: Lots of fresh mouse droppings noted in the following areas:
1. On the floor behind the front rice cooker.
2. Below the 2-compartment sink.
3. On the shelf holding cleaned cutting boards.
4. In the cabinets in the sushi preparartion area.
5. Behind the chest freezer in the small storage room.
Corrective Action(s): Clean, sweep and sanitize all areas noted with the mouse droppings.
- During the inspection, staff removed all the cutting boards to run them through the dishmachine for washing and sanitizing. The area where the cutting boards are stored will be cleaned and sanitized.
Contact a pest control company and have them place traps, find access points and do inspection of the facility at least once a month.

Handwash stations, including public washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were noted at 4.0C or below.
All freezer units were noted at -18C or below.
Food noted stored protected and in the proper storage hierarchy.
Rice cookers (2) were holding rice at above 60.0C.
High temperature dish machine was able to reach 71.0C at the plate level during the rinse cycle.
Sushi rice was noted with a pH of 4.0.
Operator renewed her FOODSAFE certificate - expires Jan 2028.
