Observation:
The chest freezer's inner lid is cracked and the seal is broken. Pieces of plastic could fall in food, and the lid is not cleanable anymore.
Corrective Action(s):
Replace the chest freezer with a new one that is in good working order and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers 16C or colder; hot holding units above 60C; and thermometers present.
- Bleach sanitizer in cloth bucket had [Cl2] 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; in groups with raw proteins below RTE foods; and 6" off the floor on shelves.
- FoodSafe certified staff present.
- General sanitation is good. Aluminum foil is being changed daily. No signs of pests.
- No expired foods in use. FIFO rules followed.
- 3-comp sink used for dishwashing purposes. Take-out mainly ordered.
- Kimchi is only being produced for use in the restaurant, and minimal retail sale to restaurant patrons.
