Corrective Action(s): Immediately free up double sinks and fill one of the sinks with beach sanitizer at 100 to 200 ppm. Make sure to follow appropriate mixing ratio for volume of sinks in use. 1 oz bleach to 1 gallon water or 28 ml to 4 litres water should work.

Non-Critical Hazards: Total Number: 1
304 - Premises not free of pests [s. 26(a)]

Comments

Cooling units less than 4 C.
Make sure handwash stations are properly stocked at all times.
Make sure to have bleach spray bottles accessible to both sides of kitchen.
**Bleach was strong (200 + ppm)
**recommend implementing a reliable dosing system (bleach dispenser) to make spray bottle concentrations more reliable as discussed. Also, make sure all bottles are clearly marked and staff don't confuse soap cleaner bottles with sanitizer bottles.
