Observation (CORRECTED DURING INSPECTION): Found 2 inserts in hot holding unit that were 50 and 54 C. Both inserts were plastic and set inside another insert like a double boiler with water levels too low.
Corrective Action(s): - Ensure food is reheated to 74 C before putting into hot holding unit. Also stick insert directly into unit, and not into another insert in the unit as the heat being transferred is greatly reduced.
- Reheat food to 74 C and place back into hot holding unit.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Found wiping rags sitting out on the counter
2. Found bucket of sanitizer to be 50 ppm quat
Corrective Action(s): 1. Ensure wiping rags are kept in the sanitizer buckets when not being used to prevent bacterial growth.
2. Ensure to change sanitizer buckets as needed to ensure sanitizer is 200 ppm quat.

Observation (CORRECTED DURING INSPECTION): Watched staff member return from break and went to put gloves on with out washing hands first
Corrective Action(s): Remind all staff of proper hand washing procedures (i.e. after returning from break, before putting on gloves, etc).

Observation: Noted a plastic lids for inserts were cracked and broken, some were missing small sections in the middle of the lid.
Corrective Action(s): Must discard and replace all cracked, broken or heavily worn equipment and replace with items that are in good condition.

- Side cooler was 3 C
- Topping cooler was 4 C
- Hot holding of all items other then the 2 double stacked inserts were 60 C or hotter
- Hand sink had liquid soap, paper towel, hot and cold water
- No signs of pest activity noted during inspection
- General sanitation is satisfactory.
