Observation (CORRECTED DURING INSPECTION): Bleach spray bottle was too strong and bleach out the chlorine test strips.
Corrective Action(s): Refilled to 100 ppm during inspection. Only 1 tsp of bleach per liter is required.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Sushi chef did not wash their hands properly and dried his hands on the towel used to wipe the counter down afterwards. This poses an even higher risk than normal since the staff member was handling food that will not be cooked.
Corrective Action(s): Ensure that staff wash their hands properly every time. Discussed during inspection.

Observation: Mouse droppings found in the following areas:
-Next to the shelf in the kitchen beside the sliding glass door cooler.
-In the corners of certain parts of the restaurant (photos taken)
-On the lower shelving at the sushi bar (no food stored here).
-One dropping was found on the shelf in front of the sushi display cooler.
-On the floor beside bags of flour.
Repeat violation.
Corrective Action(s): Call a pest control company immediately and clean all droppings.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: a) Clean the droppings found in the restaurant, as noted in violation code 304.
b) Grease buildup found behind the grill and on the fume hood.
Corrective Action(s): Clean today.

Comments

A follow up inspection will occur tomorrow. Failure to comply will result in further enforcement action taking place, including the issuance of a Closure Order, violation tickets or a Correction Order, as per Fraser Health's progressive enforcement policy.
Violation ticket amounts can be issued for each day that the violation occurs and are listed below:

-Food Premises Regulation (FPR) s. 21(3)- Failure to ensure adequate employee hand washing - $230.
-FPR s.26- Failure to ensure that premises is free of pests- $230

Coolers were < 4 C.
Freezers were < -18 C.
Dishwasher final sanitizing rinse cycle reached 50 ppm chlorine at the plate level.
Sinks supplied with hot and cold water, soap and paper towels.
