Observation (CORRECTED DURING INSPECTION): A bucket of chilli curry in walk-in cooler was measured at 22C, it was prepared last night
Corrective Action(s): - Discarded the bucket of curry
- Cool food items from 60C to 20C withing 2 hours and from 20C to 4C within 4hours in the cooler
- Use ice wands and portion large batches to facilitate cooling

- The washed and sanitized utensils must be air dried and then stacked for storing

Corrective Action(s): - Cover all food items and do not use garbage bag to cover dough. Instead use saran wrap or any other food grade material
- Store the scoop for ice in a cup outside the bin
