[s. 14(2)] Observation (CORRECTED DURING INSPECTION): Wild rice in display cooler registered at 9 C and brisket in display cooler registered at 11 C - both items have been in cooler overnight. Discussed with staff that these inserts are unable to maintain a temperature of 4 C due to their close proximity to where the hot bread is stored. Corrective Action(s): Staff discarded rice and brisket. Do not use this location for inserts or for the storage of potentially hazardous foods. Staff decided to use these inserts for product display only. Sigange posted. Violation Score: 5
