Observation (CORRECTED DURING INSPECTION): Chopped cilantro was being dried on dirty cloth towel inside the walk in cooler.
Corrective Action(s): Discard the cilantro. Do not use cloth towel for food prep as it is not food grade.

Observation: Build up of grease/ food debris/ dirt in the following areas:
- prep/upright cooler doors
- on wire racks inside the walk in cooler (ie top shelf)
- inside hot holding unit
- on white/metal containers for storing dry food items
- on conveyer roller of the pizza oven.
Corrective Action(s): Clean and sanitize the areas noted above.

Observation: There is insufficient lighting in the prep/three compartment sink area due to broken light bulbs.
Corrective Action(s): Replace the broken light bulbs and provide adequate lighting in the prep area.

Observation: Missing thermometers in the following units:
- prep cooler
- upright display cooler near the front cashier area
- walk in cooler
- upright freezer adjacent to the handwashing station.
Corrective Action(s): Provide working thermometers in each of the unit. You must record the temperature for log using the reading from the thermometer.
