*Hot holding Pizza around 50 oC at time of visit, pizza are kept for Max 1 hour, please put a timer or a sign to remind re: discarding after 1 hr or keep them >60 oC
- Quat sanitizer > 200 ppm in Spray bottle and third sink dispenser
-Mixer is clean, proper clean in place procedure is being done
-Foods are covered and labeled with expiry dates good.
-No sign of pest noted.

* Discussed reheating process for meat sauce: it is being re-heated using Cayenne (warmer and rethermalizers)- Operator stated that it takes a very short time (less then 1/2 hr) for sauce to get to boiling- please send a verification regarding this.
* No temp log sheet on site, ensure temp log sheet is maintained and available on site for inspection.
