Observation: 1) Rice scoop stored in stagnant water.
2) Raw meats stored above fruits.
Corrective Action(s): Ensure rice scoop is stored in ice or a sanitized empty container. Do not store scoops in lukewarm water, as this would promote pathogen growth on surface.
2) Ensure all raw meats, seafood, eggs are stored away from and below ready-to-eat foods (i.e. vegetables/fruits and cooked foods) at all times.

BAR
-Handwash station adequately supplied. Mesh/bowl in use for collecting food debris from handwashing.
-Cooler temperature <4'C. Food stored in proper manner.
-Sushi rice had pH <4.6.
-200ppm chlorine solution available in a labelled spray bottle.
-Ice machine satisfactory. Scoop stored separately.
NOTE: Imitation crab meat, sliced avocado and cucumber stored at room temperature. Ensure to take small amount out each time to last for 30min-1hour.

KITCHEN
-Handwash station adequately supplied.
-Refrigeration temperatures satisfactory; Hot-holding temperatures satisfactory.
-High temperature dishwasher achieved 75.4'C at the plate level after final rinse.
-200ppm chlorine solution prepared in a labelled spray bottle.
-Ventilation canopy hood maintained. Next service in November.
-No evidence of pest activity observed throughout the facility.
NOTE: Ensure cooked foods (i.e. cooked chickens/tempura) stored on counter are taken out from cooler / fried in small amount each time. All cooked foods stored at room temperature more than 2 hours should be discarded.
-General maintenance and sanitation good at this time.
