Observation:
Ice machine has mould growth on flaps.
Corrective Action(s):
1. Remove and discard ice from ice machine. To be corrected immediately.
2. Clean and sanitize inside of ice machine following the manufacturer's instructions. To be corrected by September 8, 2017.
3. Do not use ice machine until receiving written approval from the health inspector. In meantime, you are permitted to used ice from an approved source (i.e. from a gas station) and stored in the freezer.

Observation:
- Uncovered food items in multiple coolers.
- Double stacking of containers and baskets in multiple coolers.
- Eggs stored on top rack above ready-to-eat foods in front walk-in cooler.
Corrective Action(s):
- Place a food-grade cover on all containers and ensure food items are covered and protected from contamination.
- Do not double-stack items unless there is a food-grade cover (lid) between the containers.
- Store eggs on bottom shelf under ready-to-eat foods.

To be corrected immediately.

Observation:
1. Screen door for exit door near walk-in cooler is not attached to the door frame. Exit door was open at the time of inspection.
2. Back exit door near washrooms was open at the time of inspection and there was no screen door present on the door frame.
Corrective Action(s):
1. Install screen door to door frame near walk-in cooler or keep the door closed at all times.
2. Install screen door on door frame for exit door near washrooms or keep the door closed at all times.

Doors must be closed immediately until proper screen doors are installed.

Observation:
Sanitation of the premises is severely lacking. The following must be thoroughly cleaned:
- Under cookline (up to back wall and corners)
- Under all sinks (up to back wall and corners)
- Under dishwasher and dishpit area
- Floor of front walk-in cooler
- Floor around hot water tank
- Dry storage area shelves
- Inside all coolers
- Shelves of back walk-in cooler
- Fan covers of back walk-in cooler
- Bottom shelf of double-door freezer in back (there is meat juice leaking on bottom shelf)
Corrective Action(s):
Thoroughly clean and sanitize all areas listed above. To be corrected by September 8, 2017.

Observation:
Faucet for 2-compartment sink near dishwasher is damaged and taped up to be held in place. Upon closer inspection, the tape is coming off and water is splashing out of the top of the faucet.

Repair/replace faucet for 2-compartment sink near dishwasher. To be corrected by September 8, 2017.

Observation:
Ladders, paint tray and paint rollers stored on top of the water tank.

Comments

Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- Bleach sanitizer in spray bottle = 200 ppm.
- Low temperature dishwasher sanitizing with 100 ppm chlorine.

In addition to the violations above, the following requires your attention:
- Walk-in cooler requires re-organizing as the freezer is too full causing boxes to be on the floor of the freezer and stored all the way up to the door.

REMINDER:
- Dishware must be washed, rinsed and sanitized in the dishwasher NOT in the hand sink.
- Ensure proper hand washing is done at designated hand washing stations.
- Frozen foods can be thawed in any of the following methods:
In the cooler at a temperature maintained at or below 4 degrees Celsius.
Under cold running water.
In the microwave.
- Foods must be cooled down in the following manner:
1. From 60 degrees Celsius to 20 degrees Celsius within 2 hours (using an ice wand, ice water bath and/or separate food into shallow, metal pans), then
2. From 20 degrees Celsius to 4 degrees Celsius within the next 4 hours (in a cooler at or below 4 degrees Celsius).
