Follow up to report MBEK-CY9SCA. Shallow containers in use for cooling cooked food in the walk-in cooler. It was stated that food is cooled in shallow containers, then transferred to buckets the next day. Food in buckets was measured at an internal temperature of 4 degrees C or less. Raw meats stored on bottom of walk-in cooler, not above ready-to-eat food. No open cans of food observed. It was stated that canned food is transferred to food grade inserts if it is to be stored. No concerns with food colouring products observed on site at time of inspection. Premises is being maintained in sanitary condition and storage areas are organized. No signs of pest activity. Equipment/utensils stored in sanitary condition. Hole noted on previous routine inspection report is still sealed. Bleach sanitizer at three compartment sink and in labeled spray bottles measured 200 ppm chlorine bleach.
