Observation (CORRECTED DURING INSPECTION): Semi soaked rice noodles held beside prep cooler with no temperature controls.
Insert of Vietnamese deli meat stored double stacked in the BOH prep cooler. Product measured 7.8 C internal.
Corrective Action(s): Rice noodles put on ice. STAFF MUST ALWAYS HAVE SOAKING RICE NOODLES ON ICE OR IN THE FRIDGE.
Deli meat moved into a metal insert and stored in the prep cooler. Do not double stack containers of food as this can prevent the product from being held cold.

Observation (CORRECTED DURING INSPECTION): -Sanitizing compartment of the 3 compartment sink not filled with sanitizer. Staff member filled up the sink but could not determine appropriate concentration of sanitizer.
-Surface sanitizer not available in the BOH at the time of inspection.
Corrective Action(s): -Maintain the sanitizer concentration at 100 ppm chlorine. Obtain test strips to verify concentration of sanitizer solution.
1 COMPARTMENT OF THE 3 COMPARTMENT SINK MUST BE FILLED WITH SANITIZER SOLUTION AT ALL TIMES TO FACILITATE MANUAL WAREWASHING.
