Observation: Internal temperature of cheese and ham in the top inserts of the pizza preparation cooler ranged from 9-10 degrees C. Too high.
Pizza preparation cooler not in good working order.
Correction: Repair or service the prep cooler so that it is capable of maintaining all foods at 4 degrees C or below at all times. Do not fill the top inserts to more than 1/2 full. Ensure to monitor and record cooler temps daily ( By July 15th, 2020).

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Build up of flour noticed on the pizza dough sheeter machine and behind the machine.
Correction: Clean the pizza dough sheeter thoroghly after moving the machine. Ensure to remove flour from all parts of the machine. Sanitize all food contact surfaces using 100 ppm chlorine bleach solution ( Jan. 8, 2019)
