-Front line cooler was at 4C
-Back sliding door cooler was at 3C
-Food in coolers was covered/wrapped to prevent contamination
-Curried fish balls were being kept at 65C (min 60C)
-Wiping cloths stored in bleach sanitizer solution (100ppm)
-Operator knowledgeable about manual dishwashing procedures
