Observation (CORRECTED DURING INSPECTION): Dipper well for storing scoops was turned off.
Corrective Action(s): Ensure dipper well is turned on at all times.

Observation (CORRECTED DURING INSPECTION): No sanitizing solution available in the kitchen area at time of inspection. Bucket in the dining area did not have bleach.
Corrective Action(s): Provide 100 ppm solution of bleach for storing wiping cloths both front and back of the premises.

Observation: There are flies in the kitchen area. Some control measures provided.
Corrective Action(s): Provided adequate control measures for pests (flies). Obtain commercial coils for flies, etc. Do no use domestic fly strips especially in the servers' area where exposed food may be contaiminated.

Observation: Cleaning required underneath equipment and other areas (such as ceiling tiles etc.)
Corrective Action(s): Clean underneath equipment especially the cooking area as there ared debris and grease build up.

Comments

Hand wash stations equipped with liquid soap and paper towels.
Walk-in cooler was at 2-3 deg C. Walk-in freezer was at -18 deg C.
Prep line coolers were at 3-4 deg C. Upright cooler was at or below 4 deg C.
Hot holding for gravy, hollandaise was above 60 deg C.
Temperature log was available; however, temp. log must be provided for hot holding and dishwasher also.
Servers' area:
Hand sink provided with liquid soap and paper towels.
Salad cooler was at 3-4 deg C.
Soups hot held at 60 deg C and above.
Food items in the walk-in cooler were covered and dated.
Low temp. dishwasher had >50 ppm chlorine residual.
Staff washrooms and public washrooms were in sanitary condition.
New roof now installed. Ceiling tiles over the kitchen area to be replaced. More new equipment to be installed in the kitchen area.
Kitchen area still to be improved (i.e. mop sink area and dry storage area).
