209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): - Insert of cooked bacon stored in 2-door cooler at back was uncovered.
- 1 cracked egg was found in egg tray in 2-door cooler.

- Insert was covered by staff during inspection. Ensure all stored foods are protected from contamination.
- Cracked egg was discarded by operator.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep cooler at front had air temperature of 10.2C. Stored foods included non-PHFs (bread) and small portions of sandwich ingredients for immediate use. Operator was aware of the inconsistent cooler temperature, and indicated that small portions of ingredients are kept in the cooler for no more than 1 hour during lunch rushes. Breads are relocated to the freezer at the end of the day, and nothing is stored in the cooler overnight.
Corrective Action(s): Repair or replace cooler so that it can maintain an air temperature of 4C or colder.
- Continue to store most food items in the back 2-door cooler (air temperature 3C) and non-PHFs only in the prep cooler.

Routine

Temperatures:
- 2-door cooler: 2C
- Prep cooler: 10.2C (see violatoin 308)
- 2-door freezer: -14C (all items in solid state)
- Beverage cooler: 4C
- Hot held rice: 74C

- Handsinks supplied with hot+cold water, liquid soap and paper towels. No obstructions to sinks.
- 200ppm QUATS sanitizer solution dispensed from 3-compartment sink.
- 100ppm chlorine sanitizer solution detected in sanitizer bucket with wiping cloth submerged.
- Dishwasher is currently not in use - facility has not been using it since the start of COVID-19. Facility uses single-use utensils and take out boxes to serve customers, while cook ware and equipment are cleaned/sanitized manually.
- Reviewed manual dishwashing method - no concerns.
- Ice machine no longer in use.
- Observed cooling of curry chicken using cold water bath. Reviewed procedures with operator - no concerns.
- Overall good storage practices in coolers and freezers (with the exception of observation in code 209).
- Vent hoods appeared in excellent sanitary condition. Last service date was March 2021.
- No signs of pests at time of inspection.
- Pest control devices noted on site - services are provided by the building.
- General sanitation satisfactory.
- Operator on site has valid FOODSAFE - expires April 17, 2024.
- Health permit posted in conspicuous location.
