Observation (CORRECTED DURING INSPECTION): 1.Dishwasher out of order since Oct 5, 2016. Manual dishwashing since yesterday. Washing step combined detergent + sanitizer, then rinsed and air dried.
2. Sanitizer bottle with vinegar solution
Corrective Action(s): Manual dishwashing must have 4 steps done in correct order:
1. Wash (warm water + detergent
2. Rinse
3. Sanitizer (50-100 ppm chlorine solution = 1 cap bleach per 4 L of water)
4. Air dry

Sanitizer bottle must have 100-200 ppm chlorine solution (1 tsp bleach per 1 L water).

Observation: 1. Holes for beverage hoses under bar to beer room
2. Gaps between double emergency door in downstairs service hall
Corrective Action(s): Ensure all holes and gaps large enough for a finger is blocked/covered/sealed to prevent possible pest entry.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Mechanical dishwasher out of order since Oct 5, 2016.
Corrective Action(s): High temp dishwasher must be able to sanitize dishes at 71 C at the plate and 82 C at the gauge. Ensure dishwasher is repaired as soon as possible. Operator has contacted technician yesterday about work order.
In meantime manual dishwashing practices will be implemented. To minimize dishware for manual dishwashing all food must be served in single use disposable containers (take out containers) due to restricted space and man power while dishwasher is out of order. Correction Order Issued.

-Sanitizer noted 200 ppm chlorine solution at the end of inspection
-No signs of pest activity noted during inspection
-FOODSAFE certified staff on shift
-Glasswasher noted: 50 ppm chlorine at bar
-Ice machine maintained in sanitary condition
-General sanitation satisfactory

***All coolers and freezers require a thermometer in each unit
***Ensure sanitizer bottle is properly labelled "Sanitizer" or "Bleach water"

Notes:
-Renovations nearly complete in Kitchen. Ceiling still to be complete. Downstairs seating area still under construction. Bar and Lounge areas will also be renovated in the near future.
-New cooking equipment installed (oven, deep frier, stove)
