Observation: 1. Mildew observed inside the ice machine. 2. Food debris observed on the vegetable cutter.
Corrective Action(s): Clean and sanitize aforementioned equipment. For the ice machine, discard the current batch of ice and the first batch of ice after sanitizing the machine. Ensure food equipment is cleaned and sanitized on a regular schedule. Correct by: Immediately

Observation (CORRECTED DURING INSPECTION): 1. Sanitizing bucket with wiping cloth stored inside measured at 0 ppm chlorine. 2. Low temperature dishwasher dispensed 0 ppm chlorine at the plate level.
Corrective Action(s): 1. Discard the solution in the sanitizing bucket and refill it with 200 ppm chlorine solution. Sanitizing all food contact surfaces before using them.
2. Until dishwasher is able to dispense at least 50 ppm bleach solution at the plate level, manually warewash utensils and plates. Set up manual warewashing in the 2 compartment sink.
