Observation (CORRECTED DURING INSPECTION): REPEATED VIOLATION: Sanitizer solution for prep surfaces prepared at the beginning of the inspection. Sanitizer at correct concentration at this time.
Corrective Action(s): Ensure to prepare 100-200ppm chlorine solution PRIOR TO INITIATING ANY FOOD PREP in the morning. One for the front area and one for the back area must be available for use. Use the solution to sanitize all food prep surfaces in the morning, after each possible contamination and every 2 hours during operation.

Follow-up inspection conducted:

- Pizza prep cooler repaired and now operating at 0'C at this time.
- Some cleaning done for the areas mentioned during the routine inspection. However, better cleaning job is required still for the areas. Ensure to scrub clean surfaces behind the prep cooler door handles.
- Ensure to remove droppings EVERY morning and treat the area using bleach.

Spoke with operator on site. At least one staff on site must be Foodsafe level 1 certified as discussed and agreed at this time.
