Observation (CORRECTED DURING INSPECTION):
Several prepared containers of meats and potentially hazardous foods stored above 4 degrees Celsius (40 degrees Fahrenheit) in the front under-counter cooler. Person in charge informed that these foods were placed into the cooler approximately 2 hours prior.
Corrective Action(s):
Move all potentially hazardous foods (e.g. meats, dairy, eggs) into the walk-in cooler maintained at or below 4 degrees Celsius.

Observation (CORRECTED DURING INSPECTION):
Veggie slicer stored under the prep counter with dried veggies stuck on it.
Corrective Action(s):
Thoroughly wash, rinse, sanitize and air dry veggie slicer before storing it away. Ensure to use a proper brush to get into the small grooves and hard to reach areas.

Observation (CORRECTED DURING INSPECTION):
No sanitizer readily available for food contact surfaces. Sanitizer spray bottle was empty at the time of inspection.
Corrective Action(s):
Refill sanitizer spray bottle with a concentration of 200 ppm QUATs. Ensure sanitizer at the proper concentration is readily available at all times of operation.

Observation:
Ambient temperature of front under-counter cooler measured at 16 degrees Celsius (~61 degrees Fahrenheit). Thermometer inside cooler also display temperature approximately 16 degrees Celsius.
Corrective Action(s):
Service cooler to ensure temperature is maintained at or below 4 degrees Celsius. Do not store any potentially hazardous foods in this cooler until receiving written confirmation from the Health Inspector.

- Sandwich prep cooler inserts maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).

Back:
Hand washing station (at 3-compartment sink) fully equipped with liquid soap, paper towels and hot/cold running water.
3-compartment sink available for manual warewashing. Drain plugs available.
Concentration of QUATs sanitizer at dispenser = 400 ppm.
Temperature of walk-in cooler maintained below 4 degrees Celsius (40 degrees Fahrenheit).
Temperature of walk-in freezer maintained below -18 degrees Celsius (0 degrees Fahrenheit).
