Observation: The warewashing sinks on both sides of the dishwasher have broken hot water handles and hot water is not available for use at these sinks.

Observation: a) Light cover near the hot water tank is missing.
b) Rough concrete surface visible at the left hand beer tap. This surface is not smooth, impermeable and easy to clean.
Corrective Action(s): a) Replace light cover within one month.
b) Repair the concrete surface so that it is smooth, impermeable and easy to clean.

Comments

Main Kitchen:

Staff have FoodSafe equivalent training.
Hand sinks were supplied with hot and cold water, soap and paper towels.
The ventilation hood is cleaned regularly.
All coolers were < 4 C.
Hot held foods were > 60 C.
The dishwasher reached > 71 C at the plate level.
The bleach sanitizer solution was tested at 100 ppm chlorine.

Bar:

The glasswasher had 50 ppm chlorine.
Bar hand sink was supplied with hot and cold water, soap and paper towels.

Back Kitchen:

Soap and paper towels available at the sink.
Walk in coolers (2) were < 4 C.
Walk in freezer was < -18 C.

General:

No evidence of pests.
General sanitation was satisfactory.
