Observation: Dishwasher observed not reaching a minimum of 71c (At plate level) on final rince cycle. Wash temperature to be too low at 125F. A final rinse temperature of 64c was only achieved
Corrective Action(s): Technician was called at time of inspection. All plates and utensils will need to be rewashed before premises can reopen once dishwasher has been repaired.

***Monitoring logs stopped in June. Monitoring logs in June showed wash temperature was reaching 155F for dishwasher. Ensure logs are immediately restarted. This demonstrates that the premises is doing its due diligence.
Glasswasher at 130F and approx 60ppm. Soap dispensed into wash cycle.
Seal on True Refrigerator repaired.
Damaged floor tiles repaired
All cold holding equipment cold holding at <4c
*Ensure ice water bath is used when rapid cooling ie gravy before it is relocated to walk in cooler
