Permit to operate was posted. Handsink in the kitchen and staff washroom was supplied with liquid soap, hot and cold running water, and paper towels. Walk-in-cooler was at 2.9 degrees C (4 degrees C or less). Domestic cooler was 4 degrees C or less. Two chest freezers and two upright freezer temperatures were satisfactory. Hot-held food was 60 degrees C or hotter. 100-200 ppm chlorine was available in the bucket with a wiping cloth. A drain plug was available to set up the 2-compartment sink with 100 ppm chlorine sanitizer later today.
