Corrective Action(s): Cold potentially hazardous food was transferred into the walk-in-cooler below 4 degrees C. Do not store any cold potentially hazardous food inside the prep. coolers until they can be maintained at 4 degrees C or less.

Observation: The pizza cooler and prep. cooler were above 4 degrees C (~8 degrees C). The food in the top inserts was at about ~9 degrees C internally.
Corrective Action(s): Adjust, re-service, and/or replace the coolers to ensure that they are maintained at 4 degrees C or less. Correct by December 30, 2016 (Friday).

Permit to operate was posted.
Handsink in the kitchen and staff washroom was supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler was at 2.9 degrees C (4 degrees C or less).
Domestic cooler was 4 degrees C or less.
Two chest freezers and two upright freezer temperatures were satisfactory.
Hot-held food was 60 degrees C or hotter.
100-200 ppm chlorine was available in the bucket with a wiping cloth.
A drain plug was available to set up the 2-compartment sink with 100 ppm chlorine sanitizer later today.
