Observation (CORRECTED DURING INSPECTION): 1. Found peeler, mixer among other items put away after being cleaned and sanitized with food debris still on them.
2. Was advised wash and sanitize meat slicer when they get to it, 2 to 3 hours after use.
Corrective Action(s): 1. Ensure all food is removed from all equipment during the washing and sanitizing process.
2. Must wash and sanitize all equipment after use, or every 4 hours if in CONTINUAL use.

Observation: Found multiple items in walk in cooler, freezer and in baking area left uncovered and not in use. (e.g.baked goods, flours)
Corrective Action(s): All food (dry goods, or baked products) in cooler, freezer and dry storage must be covered at all times not in use to prevent contamination.

Observation: Found mice droppings on the floor through out the premises including in the walk in cooler, and on lower self of racking systems. Also found 1 dead mouse.
Corrective Action(s): 1. Must use an integrated pest management system: increase cleaning to remove food/water, prevent entrance of pest by blocking/filling any entry points, and remove all existing mice using traps only inside and bait outside.
2. Follow direction of a certified pest control company and have a full building assement to find any entry points and have them filled.

Observation: 1. Found holes in the walls beside freezers at front entrance.
2. Found flour and crumbs on floor in baking area and hard to reach areas, and flour on equipment in baking area.
Corrective Action(s): 1. Fill all holes that could be entry points for mice.
2. remove all food build up and debris on floors and equipment.
