Observation (CORRECTED DURING INSPECTION): Small pot of tonkatsu soup left on the induction cooker was measured at 37C.
Corrective Action(s): Soup discarded. All hot holding soups must be stored at <60C. Use thermometers to verify temperatures.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Wet wiping towels were left on the counter in the front ramen station. No bucket of sanitizer present.
Corrective Action(s): Directed staff to place 200ppm Quats sanitizer in a designated container for wiping clothes. Wet wiping clothes must be stored in the sanitizer between uses.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): An insert of green onions was stored inside the handwashing station by wok station. A jug of water was stored inside the handwashing station in the noodle station. Several tubes and a drain plug was left in the staff washroom handwashing sink. Repeat.
Corrective Action(s): Do not store anything inside handsink. All handwashing sinks must be accessible at all times. Further repeat of this infraction shall result in enforcement action.

Observation (CORRECTED DURING INSPECTION): Two small tongs used to dispense black fungas was stored in the food so that the handle part is embedded in the food.
Corrective Action(s): Store tongs right side up so that the handle is exposed to the food handler and not immersed in the food.

Observation: Food debris noted between ramen wok station and prep sink in the front.

Four pots of soup was being cooled at time of inspection and appears to be cooled properly
Soups, rice and pork mixture etc: 60 to 65C
Temperature records: up to date (checked at 10am and 5pm)

Dishwasher (low temp): 100ppm chlorine on plate, test strips available
Quats sanitizer at dispenser and spray bottles: 200ppm, test strips available
No apparent signs of pest noted at time of inspection
Reminder to have staff place personal belongings in designated locker (e.g. jacket, cap, keys, alcohol)
Discussed obtaining designated gloves for dishwashers to distinguish between tasks

Note: potential concern with pressure cooker soup setup, will check with City.
