Observation:
1. Dough mixer has heavy accumulation of debris, grease and flour stuck on.
2. Slicer has dried on veggies on the blades.
3. Dirty pizza trays stored underneath prep table.
4. Inside of microwave is filthy as there is heavy splatter on top and sides inside.
5. Crumbs have fallen in pizza warmer.
Corrective Action(s):
1. Clean and sanitize dough mixer immediately.
2. Clean and sanitize veggie slicer immediately.
3. Wash, rinse and sanitize pizza trays before storing away.
4. Clean inside microwave.
5. Clean inside pizza warmer.

Ensure any equipment that is cleaned in place is properly cleaned, then rinsed, then sanitized.

Observation (CORRECTED DURING INSPECTION):
No sanitizer available at the time of inspection.
Corrective Action(s):
Prepare a 100-200 ppm bleach sanitizer solution (half teaspoon per litre water) immediately. Sanitizer must be available at all times.

Observation (CORRECTED DURING INSPECTION):
Dishes are stored in mop sink. Operator informed that mop sink is not used to drain dirty mop bucket water, rather it is discarded in the back street.
Corrective Action(s):
- Remove dishes from mop sink and ensure they are properly washed, rinsed and sanitized before storing away.
- Use mop sink for filling and draining mop bucket. It is unacceptable to discard mop water onto the street.

Observation:
1. Several open bags of bulk items (flour and sugar) are stored directly on the floor.
2. Cans stored directly on floor below dry storage racks.
3. Several bags of spices and seasoning are left open on the dry storage rack.
4. Open can of olives (half full) stored in cooler.
5. One container of pepperoni is uncovered in cooler.
Corrective Action(s):
1. Transfer all open bulk items into a pest-proof container with a lid.
2. Place cans at least 6 inches off the floor.
3. Transfer spices and seasoning into pest-proof containers with a lid once they have been opened.
4. Transfer olives to a food-grade container with a lid. Once a canned item as been opened, any leftover food needs to be transferred to a food-grade container to prevent chemical contamination from the can lining.
5. Cover container of pepperoni with a food-grade cover. Ensure all food items are covered with a food-grade cover when not in use.
