Observation (CORRECTED DURING INSPECTION): Sanitizer solution for food prep surfaces was not available at the time of the inspection. 200ppm chlorine was prepared in a spray bottle by the operator.
Corrective Action(s): Ensure to have all food prep surfaces sanitized every 2 hours and after possible contamination during operation, in addition to at the end of each day. Have the spray bottle labelled as 'sanitizer'. Ensure to have the sanitizer available for use at all times during operation and change it every 2 weeks.

Observation: Cardboard boxes are being used to store desserts/pastries on the back storage shelves. Each box is lined with parchment papers to avoid contamination of food.
Corrective Action(s): Ensure to obtain food grade containers/bags or have the boxes replaced on a regular basis as these cannot be washed/sanitized to be reused.

Routine inspection conducted:

- Handwash station at front adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at/below -18'C.
- 2 comp sink equipped for manual warewashing. Bleach available.
- No evidence of pest activity observed at this time.
- Washroom handsink satisfactory.

General sanitation level of the facility requires improvement. Refer to above.
