Corrective Action(s): Wash utensils as spread out ONE LAYER ONLY so all parts are properly cleaned and sanitized in the washer

NOTE: there are also inserts for the racks whereby the utensils are held vertically to facilitate their cleaning

Observation (CORRECTED DURING INSPECTION): Downstairs employee washroom AGAIN has no paper towels in the dispenser.

NOTE: this was cited in the last routine check back on April 1, 2022 -continued citations will need increased enforcement such as ticketing.

-2 hour holding time tables (white board) maintained for ice tabled condiments -okay

-hot held sauteed onions 64 deg C

-High temperature washer final rinse 77 deg C at plate level (2nd wash)

Chemical Controls:
-QUAT type sanitizer dispenser/buckets >200ppm as per test strips

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation good
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath

Professional pest control comes on a regular basis: Terminix comes in on a monthly basis -live traps observed throughout
