Observation (CORRECTED DURING INSPECTION): Food debris observed in the cracks of the potato presser.
Corrective Action(s): Clean and sanitize the potato presser, especially the hard to reach areas.

Observation (CORRECTED DURING INSPECTION): Operator stated deli slicer was cleaned and sanitized by mixing detergent with bleach sanitizer. This is not a proper way of sanitizing food equipment.
Corrective Action(s): Clean the deli slicer with detergent, then rinse with potable water. After sanitize with food grade sanitizer and let air dry. Educate staff on the proper sanitizing step.

Observation: 1. Three dozens of raw eggs stored on top of a bucket of cut lettuce in the stand-up cooler.
2. A bucket of deli meat was stored inside prep cooler under the cooling fan without cover. Accumulation of dust observed on the fan.
Corrective Action(s): 1. Move the eggs to the bottom away from vegetables and ready-to-eat food. Correct by: today.
2. Cover the bucket with a food-grade cover. Clean and sanitize the interior of the prep cooler. Corrected during inspection.

Observation: Rodent droppings observed behind chest freezer located in the storage room separate from the facility.
Corrective Action(s): Clean the area and remove any rodent droppings from the area. Monitor the rodent activities in the area and contact professional pest control if necessary. Correct by: Sep 12, 2021.
