Observation (CORRECTED DURING INSPECTION): Coffee creamer stored in thermos at front counter area. Creamers are a perishable item and thermos containers are not meant to keep foods under temperature, but to preserve the temperature of the food item for as long as it can. Once creamers are above 4C they must be discarded after 2 hours.
Corrective Action(s): Discard coffee creamer. Store the creamer under 4C or have them time tracked on a 2 hour cycle. Date to be corrected: immediately

Observation (CORRECTED DURING INSPECTION): 1) Rice scoop stored in standing water. Food utensils must be stored dry or in ice water to prevent the growth of bacteria on the food contact surfaces
2) Wiping cloths stored on the table. These need to be stored in sanitizer solution to prevent the growth of bacteria.
Corrective Action(s): 1) Clean and sanitize rice scoop and bowl. Store dry or in ice water
2) Store wiping cloths in sanitizer buckets.

Observation: 1) Elastic bands used as the door handle for sliding door cooler. This is not a cleanable surface.
2) Plastic liners and newspaper used for liners on some food contact surfaces. This is not an acceptable practice as these surfaces are not easily cleanable, smooth, durable, and non-absorbent. Absorbent surfaces cannot be easily cleaned.
Corrective Action(s): 1) Remove elastic bands and fix door handle
2) Remove plastic liners and newspaper from food contact surfaces.

-Handwashing station contains hot water, liquid soap, and paper towel
-Coolers measured 4C or less: display drink cooler, insert cooler, sliding door cooler
-Freezers measured -17C and -15C: stand up freezer and chest freezer
-3 hot holding units measured above 60C: 2 meat and 1 rice. 2 other hot holding units not in use at time of inspection
-Dishwasher measured 73.5C at the plate level >above 71C at plate level is required at all times
-Bleach bucket measures 100ppm
-Foods are stored covered and protected from contamination
-Foods stored 6 inches off the floor
-No signs of pest during inspection
-Note: instant gravy is rehydrated and cooked then stored in thermos which measured at 61C. These must be hot held above 60C at all times or time track and discard after 2 hours. Written proof to show the product is stable at room temperature storage must be provided if this practice is continued.
