Comments

Hand sinks supplied with hot and cold water, soap and paper towels.
Display cooler had an ambient temperature of 4 C.
Quats sanitizer was at 200 ppm.
Dishwasher final sanitizing rinse reached 71 C at the plate level. Max hold thermometer on site. Ensure that the dishwasher is checked daily and that it is reaching 71 C at the plate level.
No evidence of pests.
General sanitation was satisfactory.
