Observation: Meat slicer observed not properly cleaned. Debris observed on the guard surfaces. Blade surfaces observed with no debris
Corrective Action(s): Use small bottle brushes to access hard to reach areas on the slicer. Purchase a flashlight to verify cleaning has been done.

Observation: 2 fluorescent light bulbs observed not working in the dishwashing area. This outstanding item was listed in my previous report on March 6, 2023

Unless bulbs are of the shatterproof type, fluorescent light covers will be required.

****Monitoring logs are not up to date . Last recorded logs were from June 27, 2023. Ensure logs are recorded daily to show you are doing your due diligence, especially in the event of a food borne illness complaint.
Back room hand sink is now working. Hot and cold water provided. Liquid soap and paper towels provided
Processed food items covered and labelled/dated inside walk in cooler
Walk in cooler cold holding at <4c
Dishwasher at 120F and approx 75ppm chlorine. Soap dispensed into wash cycle.
Ice machine is clean
Front coolers all cold holding at <4c
