Observation (CORRECTED DURING INSPECTION): OUTSTANDING: sanitizer solution missing at the bar. Wiping cloths were not stored in sanitizer solution in the kitchen.
Corrective Action(s): ensure that bleach sanitizer at 100 ppm chlorine is always available in the kitchen area and sushi bar area.
