Glass washer 100ppm Chlorine. Thank you. Back kitchen - in process of clean up at the time of inspection. Sanitizers available both at front and back end. Peroxide and quats. Front bar end continues to have some fruit fly activity. Spills have been cleaned up. Still some sticky residue at the bottom of the drinks carton. Countertop is bumpy and porous - stone countertop with pebble surface wearing down. Spray with sanitizer and leave on overnight to prevent flies from breeding. Wipe up spills. Leave cloths in sanitizer during shift, swap with new sanitizer regularly (2-4hrs or as needed) to prevent flies from being attracted to the cloth.
