Observation (CORRECTED DURING INSPECTION):
- Cooked tilapias in 2 plates sitting inside the oven to keep hot, the temperature measured at 45C. The owner stated that fish just cooked half an hour ago.
Corrective Action(s):
- Reheat fish to 74C, and store fish in the hot holding case at the service area to keep 60C. The opwner corrected it immediately.

Observation:
- The vent hood and the filter has heavy grease built up.
- The gas oven was not in a sanitary ocndition. Heavy grease built up on the top and the sides.
- The cooking pots was not in a sanitary condition. Heavy grease built up exterior of the pots.
Corrective Action(s):
- Thoroughly clean the aforementioned items. The filter of the vent hood needs to be ckleaned at least bi-weekly.

Comments

Routine inspection conducted with the presence of the owner.

- General sanitation needs to be improved, see code.
- Handsinks were fully equipped with liquid soap, hot and cold running water, and paper towels.
- 100 ppm chlorine sanitizer available inside two buckets with wiping cloths in the back kitchen and front service area.
- 100 ppm chlorine sanitizer measured in the third compartment of the three compartment sink that was being used to sanitize chopping boards and cutlery.
- Dishwasher not in use at time of inspection as there is no dine-in services provided. Remind the owner the temperature at plate level must reach 71C if use dishwasher to clean kitchen ware.
- All Coolers were at or below 4 C.
- Temperatures of the freezers were satisfactory.
- Food in Hot holding case was at or above 60 C.
- Abell pest control company was present doing monthly service during inspection. No pest activity found.
