Observation: Some areas require improved cleaning.
Corrective Action(s): Clean the cupboard (and tray) under the single sink in the Tim's area. Clean the floor under shelves and along wall baseboards in the Tim's dry storage room and the Back of House food storage room. Clean all plastic food carts regularly. Clean the filter at the side of the cold drink machine (Tim's). Follow a routine cleaning schedule.

Tim's
Coolers (milk line cooler and milk dispensers) are at 4 C or colder - good.
Soup and chili hot holding is at 60 C or hotter - good.
Quats is at 200ppm (for sanitizing wiping cloths and work surfaces).
Hand washing - liquid soap and paper towels are provided.
Equipment - The cold ice drink machine is not in use. Filter at side is dusty and needs to be cleaned.
Cupboard under the single sink requires cleaning.
Cafeteria
Walk in cooler is at 4 C. Prep cooler (upper inserts) is keeping food at 4 C or colder. Reach in self serve cooler is at 4 C.
Hot holding of rice, soups, sauces is at 60 C or hotter.
Cooked chicken was cooked this morning, cooled, cut into pieces and is being kept on ice however the food temperature is at 20 C. Bring out chicken only in small amounts to be used within 2 hours or discarded after 2 hours. Add this to your food safety plan.
Quats - 200ppm - good.
Back of House
Walk in cooler is at 4 C. Temperature records are being kept for coolers.
Freezer is at -9 C (note that -18 C is the recommended temperature). No longer term food storage and no fish storage in this freezer.
Cleaning - see above.
Handwashing sink has liquid soap and paper towels.
Dishwasher has a final sanitizing rinse of 160 F (measured inside of the machine) when the gauge reads 180 F - good.
Reviewed information with new Manager (transfats, food safety plan, sanitation plan, etc.). Water supply is well water. Note this when reviewing equipment maintenance procedures and maintenance schedule.
