- Uncovered food products observed in the sliding glass door cooler across from cooking area. Uncovered food products also observed in the lower sections of the preparation coolers.
- Scoops used to dispense food products observed stored directly in dry products.
Corrective Action(s): Cover all foods to protect from contamination. Do not store scoops and other dispensing utensils directly in dry products. Ensure all food is protected from contamination. Correct immediately.

Routine inspection:

Note: premise is closed on Wednesdays.

Reminder when in operation to have a 100ppm bleach sanitizer solution prepared and available for use. Store all wiping cloths in this solution when not in use.

Hand sinks provided with liquid soap and paper towels.
Dishwasher registers 82 degrees C at the plate surface during the final rinse cycle.
Walk in cooler at 2-4 degrees C.
Walk in freezer at -20 degrees C.
2 door freezer at -14 degrees C. Monitor and ensure -18 degrees C.
2 door cooler for storage of vegetables at or below 4 degrees C.
Both preparation cooler inserts and lower sections at or below 4 degrees C.
No hot holding at time of inspection.
Dessert cooler at 0-1 degrees C.

Reminder to monitor and record temperatures of all coolers, freezers, hot holding, and dishwasher final rinse cycle temperature.
