- sanitizer measured >200ppm chlorine; use a mixture of 1tsp bleach in 4L of water
- dishwasher reached 72C at the final rinse cycle; be mindful of how dishes are stacked to ensure that all dishes get sanitized
- sushi rice pH 4.0
